Roasted Japanese Eggplant Recipe - Today we're going to make one of my favorite recipes  it's for roasted Japanese eggplant now. I have a special technique that I'm going to teach you for salting the eggplant before we cook it. it's going to make it really really tender.

Once we've salted it, we let the moisture rise out of it. we're gonna wipe that moisture off and then we're gonna load it up with flavor and cook it in the oven until it's nice and perfectly tender and moist. So let me show you how to make this japanese eggplant. here's what you need:

  • 3 Japanese eggplants 
  • sea salt 
  • 1/8 cup of olive oil
  • one heaping tablespoon of minced garlic
  • juice from one lemon 


  1. Trim  the ends from the eggplants and slice in half the long way
  2. carefully score the flesh with short diagonal cut. And then generously sprinkle with sea salt.
  3. allow the eggplant to sit for 20 to 40 minutes until some brown liquid is drawn out
  4. Preheat the oven to 400 degrees Fahrenheit
  5. Use a paper towel to wipe the moisture from the eggplants.
  6. In a small cup combine the remaining ingredients
  7. Generously coat the tops of each eggplant with the garlic mixture
  8. Roast the eggplant for 30 to 40 minutes. It's really important to make sure that your eggplant is fully cooked. Before removing it from the oven, it should be creamy on the inside with lightly crispy.
