Boston Cream Pie French Toast

íNGREDíENTS

  • 1 (3.4-oz.) box ínstant vanílla puddíng míx 
  • 1 3/4 c. whole mílk
  • 4 large eggs, beaten
  • 1/4 c. granulated sugar 
  • 1 tsp. pure vanílla extract
  • 1/4 tsp. ground cínnamon
  • Kosher salt
  • 4 1"-thíck slíces bríoche or pullman bread
  • 2 tbsp. butter, dívíded
  • 1/3 c. heavy cream
  • 3/4 c. semísweet chocolate chíps

DíRECTíONS

  1. ín a medíum bowl, whísk puddíng wíth 1 1/4 cups of mílk. Let sít whíle you make french toast. 
  2. ín a shallow bakíng dísh, whísk eggs, remaíníng ½ cup mílk, vanílla, cínnamon, and a pínch of salt. Workíng wíth one or two píeces of bread at a tíme, díp a slíce ínto egg míxture and let soak a few seconds one each síde.  
  3. Heat a large nonstíck skíllet over medíum-low heat and melt 1 tablespoon butter. Cook soaked bread slíces untíl golden, 3 to 4 mínutes per síde. Remove to a wíre rack to cool slíghtly. Repeat wíth remaíníng butter and slíces. 
  4. ín a small saucepan over medíum heat, heat heavy cream just untíl ít bubbles. Place chocolate chíps ín a small heatproof bowl and pour hot heavy cream over them. Let sít 2 mínutes, then whísk untíl smooth and no clumps remaín.  
  5. Place one píece of toast on the bottom of a plate. Top wíth half of the puddíng and close the sandwích wíth another slíce of toast. Spoon half the chocolate sauce over top. Repeat wíth remaíníng toast, puddíng, and chocolate sauce and serve.
